Dragons Love Tacos - and so do kids!

When Taco Tuesday and Reading Reimagined come together it makes for a delicious book cafe!



This silly book (ideal for reading aloud) is about how to make dragons happy - tacos! But whatever you do, don't serve any spicy salsa. Dragons hate spicy salsa. And the same rule probably applies to children. right?

Whenever I ask for dinner suggestions, I hear a chorus of "Tacos!" These tacos are a favorite of everyone in our house--so much so, that I have eager helpers whenever I make them.  It's a great meal to make for guests, and the filling saves really well for quick leftovers. They're not gourmet, but they are delicious. I hope you enjoy them!



Tortilla Land uncooked flour tortillas (found in the grocer's refrigerated section)

1 lb. ground meat (beef, turkey, and elk all work great!)

2 cans black beans, drained

6 T. McCormick taco seasoning

1-1/4 c. water

Romaine lettuce, shredded

Sharp cheddar cheese, shredded

Tomatoes, chopped

Avocado, sliced

Sweet white corn, warmed

Sour cream


Brown meat in a large skillet over medium heat. Stir in black beans, taco seasoning and water. Simmer on low 15-20 minutes until water evaporates.

Meanwhile, prepare toppings in small serving bowls. Cook tortillas in dry skillet over medium heat.

Serve buffet-style. To make the most delicious non-spicy taco, spread a thin layer of sour cream on a tortilla. Top with 1/4 c. meat/bean filling. Add sweet corn, cheese, tomatoes, avocado, and lettuce. Roll up, being sure to create a "pocket" on one side! After all, kids also hate it when taco filling spills on their plates.
